Shortbread bagels with cherries: a recipe for a successful dough without yeast and milk

Bagels are delicious homemade pastries that can be made with various fillings: poppy seeds, cherries, apples, jam, or chocolate, as well as different doughs: yeast, puff pastry, phyllo, or custard.
Chef Mykola Lyulko (mykola_lyulko) shared a recipe for homemade shortbread bagels with cherry filling on his Instagram page.
Ingredients:
- butter 82% - 250 g
- sour cream 30% - 250 g
- salt - 6 g
- egg yolks - 3 pcs
- baking powder - 18 g
- vanilla - 2 g
- powdered sugar - 200 g
- sugar - 150 g
- flour - 600 g
- frozen cherries - 750 g
Method of preparation:
1. To prepare the dough, mix the dry ingredients: flour, salt, baking powder, vanilla, sugar. Stir and immediately add soft butter, sour cream, and egg yolks. Knead a homogeneous dough.
2. Divide the dough into 5-6 pieces, cover with plastic wrap, and leave in the refrigerator for 30-60 minutes.
3. Meanwhile, defrost the cherries, or if using fresh ones, wash and peel them.
4. Roll the chilled dough into a circle, divide it into 8-12 pieces.
5. Form bagels with the filling.
6. Bake at 180 degrees for 15-25 minutes. Sprinkle them with powdered sugar when hot. Enjoy!
