Baba ganoush is an eggplant appetizer. The main ingredient is the flesh of the vegetable, which becomes tender and homogeneous after baking and chopping. This dish is perfect for a festive table.

Eggplant and sesame seeds.

Ingredients:

  • eggplant - 400 g
  • garlic - 3 cloves
  • sesame paste - 3 tbsp
  • smoked paprika - 1 tsp
  • lemon juice - 3 tbsp
  • coriander, pine nuts, salt, pepper - to taste

Method of preparation:

  1. Cut the eggplant in half. Brush with sunflower oil.
  2. Cover a baking sheet with parchment and place the vegetables.
  3. Bake at 220 degrees for 40 minutes.
  4. Transfer the eggplant flesh to a plate.
  5. Add the lemon, paprika, garlic and sesame paste.
  6. Beat everything in a blender until small pieces remain.

How to choose a quality eggplant

  • If the vegetable is brown, it is spoiled.
  • It should be free of all kinds of damage and spots.
  • The weight of an average ripe eggplant should be at least 0.5 kilograms.
  • The skin of a good vegetable is smooth and shiny.
  • An overripe fruit dents when touched.
