Salad with crispy eggplant: how to cook a vegetable in an interesting way
Eggplant is one of the most versatile vegetables that is suitable for preparing a variety of dishes. And it's not just for wrapping or stuffing, but also a delicious salad. If you cook it properly, it will be juicy and crispy and will go well with other simple ingredients.
The idea of cooking a salad with crispy eggplant was published on the Instagram page of a food blogger with the nickname v.vanilinka.
Ingredients:
- eggplant
- tomatoes
- cilantro
- cashew nuts or other
- starch
- oil
- salt
Ingredients for the sauce:
- oil, preferably olive oil – 30 ml
- oyster sauce (can be replaced with soy or fish sauce) – 1-2 tbsp
- sugar – 1 tsp
- chili pepper – 1/4 pod
- salt and pepper
Method of preparation:
1. Cut the eggplants lengthwise into 4 cm slices. Season with salt and leave for a few minutes, then pat dry with a paper towel, roll in starch, and leave again for 15 minutes.
2. Fry the eggplants in oil in deep fat. Take it out and dry it again on a paper towel – you don't need any extra fat.
3. Blend all the ingredients of the sauce in a blender, taste, and add a little more salt and pepper if necessary (it can be stored for a long time, so you can use the preparation for several salads).
4. Cut the tomatoes into slices, add crispy eggplant, chopped cilantro, nuts, and pour over the sauce.
