One of the simplest and most delicious desserts that can be made from the simplest ingredients is marshmallows. You can choose any flavor, it all depends on your preferences. It will be very tasty with strawberries, apples, or berries.

Ingredients:
- strawberry puree - 75 g
- sugar - 140 g
- water - 50 ml
- agar-agar - 5 g
- pink dye (optional)⠀ ⠀
For the meringue:
- egg white - 35 g
- citric acid - a pinch
- sugar - 35 g
For the sprinkles:
- corn starch - 5 g
- powdered sugar - 10 g ⠀ ⠀
Method of preparation:
1. For the syrup, beat strawberries in a blender. Transfer to a saucepan and boil until slightly thickened. Add sugar, water, agar-agar, and dye to the puree and mix. Cook over medium heat and bring to a boil while stirring. Reduce the heat slightly and stir for 4-5 minutes. ⠀
2. Add citric acid to egg white and beat on medium speed until foamy. Gradually add sugar and beat until peaks form, then pour in the hot syrup and beat at maximum mixer power for a few minutes until slightly thickened.
3. Put the finished mass into a pastry bag with a nozzle and squeeze the marshmallow halves on parchment. Leave at room temperature for several hours or better overnight. ⠀ ⠀
4. Assemble the marshmallows: glue the marshmallow halves together and sprinkle powdered sugar and cornstarch mixture on top.
You can store these homemade marshmallows in a sealed container for up to two weeks!
