Bograch is a traditional Ukrainian dish that is often prepared in Transcarpathia. This soup is quite spicy, with rich flavor, aroma and a lot of various meats. The most delicious bograch comes out exactly when it is cooked over a fire in a cauldron.

The idea of cooking real Transcarpathian bograch is published on the Instagram page of food blogger Alex Mil (mil alexx). Four types of meat will be needed.

Ingredients:

  • smoked pork fillet - 300 g
  • hunting sausages - 300 g
  • pork or veal ribs - 500 g
  • pork loin - 500 g
  • carrots - 200 g
  • tomatoes - 400 g (add a spoonful of sugar to them when cutting)
  • onion - 220 g
  • potatoes - 500 g
  • sweet pepper - 250 g
  • parsley and dill
  • hot chili pepper - 1 pc
  • tomato paste - 2 tbsp.
  • salt, pepper
  • smoked paprika - 2 tbsp. smoked paprika
  • nutmeg - 1 tsp.
  • ground hot chili pepper - 1 tsp.
  • oil - 30 ml.
  • hot sauce erosh pishta (if available)

Ingredients for galushki:

  • eggs - 1 pc.
  • flour - 70-80 g

Method of preparation:

1. Pour oil into the cauldron, put the sliced fillets and fry to make scallions.

2. Put the sliced onion and smoked paprika.

3. Stir constantly to prevent the paprika from burning. Roast for 6 to 7 minutes.

4. Add the sliced ribs and tenderloin.

5. Pour in water, or better yet, broth (vegetable or meat broth).

6. Cover with a lid and cook for an hour.

7. Put in sliced carrots, potatoes, peppers.

8. Add the tomatoes, into which a spoonful of sugar was added when chopping.

9. Put in the sliced hunting sausages.

10. Pour in salt, pepper, and hot pepper. Be sure to add hot erosh pishta sauce if available.

11. Pour water over everything and boil for about 40 minutes. When the water is boiling - add more water.

12. For the dumplings, beat the egg, salt and, stirring constantly, gradually add the flour until you have a soft dough.

13. Pinch off small pieces from the dough - these will be the dumplings.

14. Throw the dumplings into the pot, add chopped herbs and one hot pepper, cook for another 7-10 minutes.
