Quick zucchini spread with melted cheese: perfect for bread and croutons

In addition to the usual pancakes and casseroles, zucchini can be used to make a delicious and satisfying spread on bread and croutons. You can add a variety of vegetables to your taste, hard or melted cheese, and herbs. The consistency of the zucchini spread is very smooth and buttery – indistinguishable from store-bought spread. And the taste is delicate, so even children will eat it.

Food blogger Vika Chaikovska (vica.chaikovskaya) shared a recipe for zucchini spread on her Instagram page.

Ingredients:

  • zucchini – 2 pcs
  • carrots – 1 pc
  • onion – 1 pc
  • garlic – 2 cloves
  • processed cheese – 2 pcs
  • dill
  • salt, pepper

Method of preparation:

1. Chop the onion and put it to simmer.

2. Grate or chop the carrots and add to the onions.

3. Chop the zucchini and add to the vegetables. Simmer under the lid.

4. Add salt, pepper, garlic. Simmer until tender. Cool the cooked vegetables.

5. Add cheese and dill to the mass. Beat everything with a blender until smooth. Put the finished spread in the refrigerator for a while.
