Quick zucchini appetizer: suitable for both festive and everyday table

Zucchini can be the main ingredient in stews, sauces, appetizers, and soups. They can also be pickled, marinated and stewed, and made into delicious caviar.

A cook shared a recipe for a delicious zucchini appetizer with tomatoes and cheese on Instagram.

Ingredients:

  • zucchini (small) - 2 pcs.
  • salt - to taste
  • egg - 1 pc.
  • flour
  • breadcrumbs

For the filling:

  • garlic - 2-3 cloves.
  • mayonnaise - 2 tbsp
  • cheese - 125 g
  • dill - a few sprigs

Method of preparation:

1. Cut the zucchini into slices, salt, mix and set aside to let the juice drain. Drain off the excess liquid. You can also lightly dry them with paper towels.

2. Dip the zucchini rings in flour, then in the beaten egg and finally in breadcrumbs.

3. Fry in preheated vegetable oil over low heat on both sides until tender and golden brown. Put on a paper towel to remove excess fat.

4. For the filling, mix the squeezed garlic, mayonnaise and finely grated cheese in a bowl until smooth.

5. Smear the zucchini with the cheese filling and put on a plate. Sprinkle with finely chopped dill on top. Garnish with tomatoes if desired.
