Quick vegetable kebabs: 3 best recipes

If you are a vegetarian or you are just tired of meat and fish kebabs, a great alternative is to make vegetable ones. It's definitely healthier and much lighter both for the stomach and the figure.

The FoodOboz editorial team has prepared for you 3 variants of vegetable kebabs that are very easy to prepare and are healthy.

1. With cheese

Ingredients:

  • zucchini - 2-3 pcs
  • tomatoes - 5-6 pcs
  • mushrooms - 5-7 pcs
  • eggplant - 2-3 pcs
  • sweet pepper - 4-5 pcs
  • tofu or Adyghe cheese - 400-500 g
  • salt, pepper - to taste
  • dried herbs - 10-15 g

Method of preparation:

  1. Wash the vegetables well and cut them into fairly large pieces.
  2. Season well with salt and pepper and leave to marinate in their own juice for 10-15 minutes.
  3. Skewer and bake for 20 minutes. Do not exceed the timing otherwise the vegetables will simply burn. When the eggplant and zucchini become soft, the kebabs are ready.

Serve with cheese and herbs.

2. With onions and celery

Ingredients:

  • onions - 4-5 pcs
  • celery - 4 pcs
  • zucchini - 1 pc
  • eggplant - 1 pc
  • tomatoes - 4 pcs
  • sweet pepper - 2-3 pcs

Marinade:

  • olive oil - 5 tbsp
  • balsamic vinegar or lemon juice - 2 tbsp
  • salt, pepper - to taste

Method of preparation:

  1. Wash the vegetables well, peel the onions, and clean the peppers.
  2. Cut everything into large pieces. Leave the onion whole if it is medium-sized.
  3. Place in a large container, season well with salt and pepper, add oil and lemon juice, and leave to marinate for 20-30 minutes.
  4. After the time has elapsed, skewer the prepared vegetables bake for 20-30 minutes until crispy.

You can serve them with a sour cream and garlic sauce.

3. With chicken breast, mushrooms and tomatoes

Ingredients:

  • chicken breast or fillet - 1-2 pcs
  • mushrooms - 6-7 pcs
  • cherry tomatoes - 7-8 pcs
  • sweet pepper - 2-3 pcs

Marinade for chicken:

  • mayonnaise - 2 tbsp
  • ketchup - 1 tbsp
  • ground paprika - 1 tsp
  • salt, pepper - to taste

Marinade for mushrooms:

  • mayonnaise - 2 tbsp
  • garlic - 1 clove
  • black and red pepper and salt - to taste

Method of preparation:

  1. Cut the chicken and pepper into large pieces, season well with salt and pepper, add paprika, mayonnaise, and ketchup and mix.
  2. Chop the mushrooms, put them in a large container, add mayonnaise, chopped garlic, salt and pepper. Mix everything well.
  3. Leave the tomatoes whole.
  4. Skewer and bake for 15-20 minutes until cooked.

Serve the kebabs hot with any sauce of your choice.
