Salad with beets and herring is budget-friendly, fast, low-calorie, and even healthy because it is prepared without harmful mayonnaise. The classic recipe calls for boiled eggs, but you can leave them out - this salad can be eaten even during Lent.

Ingredients:
- boiled beets - 500 g
- herring - 200 g
- boiled eggs - 3 pcs
- parsley - 30 g
- onion - 1 pc
- salt - 0.5 tsp
- pepper
- vegetable oil - 2 tbsp.
Marinade:
- salt - 0.5 tsp.
- sugar - 1 tbsp
- vinegar - 3 tbsp.
- boiling water - 100 ml
Method of preparation:
1. First, boil the beets, then cut them into medium strips.
2. Next, cut the onion into half rings and marinate it.
3. Cut the herring into medium strips.
4. Pre-boil the eggs, then cut them into half rings.
5. Chop the parsley.
6. Mix all the chopped ingredients, squeeze the onion, and add to the salad.
7. Add salt and pepper and season with oil. Stir to combine.
