Quick, easy and very satisfying: how to prepare a delicious zucchini cake

Zucchini cake is a very satisfying and budget-friendly dish for which you don't even need meat. You just need to fry pancakes from the grated vegetable. Then grease them with cottage cheese cream, and the cake is ready.

The idea of making a hearty zucchini cake was published on the Instagram page of food blogger Victoria with the nickname kelbas v. The cream for greasing the cakes is made with mayonnaise and sour cream.

Ingredients for the cakes:

  • zucchini - 1 kg.
  • eggs - 3 pcs.
  • sour cream - 2 tbsp
  • flour - 190 g
  • baking soda or baking powder - 1 tsp. without a slide
  • garlic - 3 cloves
  • salt without a slide + black pepper to taste -1 tsp.

Ingredients for the cream:

  • cream cheese - 180 g
  • garlic - 2 cloves
  • mayonnaise - 1 tbsp
  • sour cream - 1 tbsp
  • salt
  • pepper

Method of preparation:

1. Grate the zucchini on a fine grater

2. Season with salt, mash a little, and drain off excess moisture.

3. Add the grated garlic, pepper, and all the other ingredients and knead the dough, a little thicker than sour cream.

4. Put a layer of dough on a well-heated and oiled frying pan, 0.7 cm thick (not too thick, but not too thin to turn over easily).

5. Fry the pancakes for 2-3 minutes on each side over medium heat.

6. Grease the finished cakes with cream.
