French cuisine is one of the most popular in the world. Quiche is no exception. It is an open pie with a salty filling on a sandy base. The filling options can be varied: from broccoli to salmon.

Quiche with tuna and spinach
Ingredients:
For the base:
- Butter - 100 g
- Whole wheat flour - 200 g
- Egg - 1 pc.
- Salt - 0.5 tsp.
For the filling:
- Canned tuna - 160 g
- Spinach - 100 g
- Sour cream - 200 g
- Eggs - 2 pcs.
- Hard cheese - 50 g
- Black pepper - 0.5 tsp
- Salt - 0.5 tsp
- Starch - 1 tsp.
- Cherry tomatoes - optional.
Method of preparation:
1. Add salt and cold butter to the flour and grind into crumbs.
2. Add the egg and gather the dough into a ball. Wrap in plastic wrap and put in the refrigerator for 30 minutes.
3. Add salt, pepper, and eggs to the sour cream and mix.
4. Grate the cheese, and chop the spinach and tuna. Add to the mass.
5. Add the starch and mix.
6. Roll the dough into a circle. Put it into the mold and form the sides.
7. Pour the filling and put the tomatoes. Bake at 180 degrees for 40-50 minutes.
Quiche with broccoli and red fish on cheese dough
Ingredients:
For the dough:
- Cottage cheese - 100 g
- Eggs - 2 pcs.
- Oil - 1 tbsp.
- Dry yeast - 3 g
- Flour - 220 g
- Salt - 0.5 tsp.
For the filling:
- Broccoli - 300 g
- Red fish - 250-300 g
- Sour cream - 200 g
- Eggs - 3 pcs.
- Salt - 1 tsp.
- Starch - 1 tsp.
Method of preparation:
1. Add salt, eggs, and vegetable oil to the cottage cheese and mix.
2. Sift the flour and yeast.
3. Knead the dough, cover with a towel, and leave at room temperature for 40 minutes.
4. Divide the broccoli into florets and cook in salted water for 2 minutes.
5. Drain the boiling water and rinse with cold water. This will keep the broccoli bright in color.
6. Cut the fish into small cubes.
7. Grind 1/3 of the broccoli in a blender, add a little water if necessary.
8. Mix sour cream, eggs, salt, pepper, starch, and broccoli puree.
9. Roll the dough into a circle. Put it into the mold and form the sides.
10. Pour the filling, and bake at 200 degrees for 40-50 minutes.
