Pumpkin soufflé pie: no sugar and no baking
This pie is the perfect solution if you have pumpkin in the fridge but don't want to turn on the oven and bake it. This is a pumpkin souffle pie. It's very flavorful, tender, has a wonderful color, and is very easy to prepare. By the way, it doesn't even contain sugar - a nice bonus for those who are losing weight.

Ingredients:
Base:
- vegan biscuits - 200 g
- vegan butter - 100 g
Souffle:
- pumpkin puree - 200 g
- coconut milk - 300 ml
- maple syrup - 2 tbsp
- cinnamon - 1 tsp
- nutmeg - 1\4 tsp.
- agar-agar - 2 tsp.
- water - 50 ml
- caramel syrup
- cookie crumbs
Method of preparation:
1. Let's start with the base. To do this, beat the cookies with melted vegan butter or margarine in a blender.
2. Tamp the resulting mass to the bottom of the mold. Put in the refrigerator for half an hour.
3. Next, make the soufflé. Mix the mashed potatoes with spices and coconut milk. Put on the stove and cook over low heat for 10 minutes.
4. Dissolve the agar-agar in cold water separately, pour it into the pumpkin puree, mix and cook for another 10-15 minutes, stirring.
5. Add maple syrup, stir and remove from heat. Let cool to room temperature and pour onto the base. Put in the refrigerator until completely set.
6. Pour the caramel syrup over the finished cake and sprinkle with cookie crumbs.
