Pumpkin soup is a real autumn hit that everyone should try. If you wish, you can combine a variety of vegetables and even meat, which is very convenient. But when preparing the dish, be sure to add a little cream for a delicate creamy taste. And also, some spicy and aromatic spices that will really help you to feel the taste of autumn.

Recipe for healthy pumpkin soup

Ingredients:

  • peeled pumpkin cut into cubes - 800-900 g
  • peeled potatoes cut into cubes - 300 g
  • cream 10-15% - 200-250 g
  • butter - 20 g (for frying)
  • olive oil
  • fresh rosemary
  • garlic - to taste (6 cloves in the recipe)
  • onion - 1 pc
  • hot chili pepper
  • salt, pepper, turmeric

Method of preparation:

1. Chop the garlic, onion and hot pepper. Fry the vegetables in a mixture of olive oil and butter, adding a sprig of rosemary.

2. While the vegetables are roasting, dice the potatoes and pumpkin. Immediately add them to the pan and fry over low heat for 3-5 minutes. Then remove the rosemary sprig.

3. Next, add 1-1.2 liters of water. Bring to a boil over high heat. After that, reduce the heat to low and cook until the potatoes and pumpkin are ready. By the way, the water should evaporate at the end to a level slightly lower than the pumpkin and potato pieces.

4. At this stage, turn off the heat, add cream and spices. Beat the mass with a blender until smooth.

5. The finished soup can be served with pumpkin seeds, slices of fried bacon, grissini, microgreens or flowers.
