Muffins are a dish that can combine many of your favorite foods. And it's what you put in them that will determine the benefits of this culinary masterpiece. Seasonal ingredients are best. For example, pumpkin. It is very nutritious and the dough is extremely tender.

The idea of making muffins with pumpkin was published on the Instagram page of nutritionist Victoria with the nickname vika.allison.

Ingredients:

  • pumpkin - 600 g
  • green onions - 2 pcs
  • chili pepper - 1 pc
  • eggs - 6 pcs
  • cottage cheese - 3 tbsp.
  • whole wheat flour - 250 g
  • Parmesan cheese (can be replaced with another cheese) - 50 g
  • mixed seeds (you can add any) - 1 tbsp.
  • poppy seeds - 1 tbsp.

Cooking method:

1. Peel the pumpkin and grate it on a fine grater. Finely chop green onions and chili and add to the pumpkin (set aside 1/2 of the pepper). Add eggs, cheese, flour, salt and pepper. Mix well.

2. Put the mixture into greased molds.

3. Sprinkle the muffins with seeds, the rest of the chili and Parmesan.

4. Bake at 180 degrees for 45-50 minutes.
