Pumpkin cheesecake: how to make a delicious seasonal dessert
With the arrival of fall, pumpkin becomes one of the most popular products. Soups, salads, preserves and even coffee are prepared from it. It is very fragrant and has a pleasant structure, and its color is simply amazing, giving dishes interesting shades.
Foodblogger Valeria Veligura on Instagram showed what she cooks from pumpkin. Her most favorite dish turned out to be cheesecake. It turns out delicious, flavorful and very beautiful.
Ingredients for the base for a 20 cm mold
- Sand cookies - 300 gr
- Butter - 115 gr
Ingredients for the filling
- Cream cheese - 300 g
- Pumpkin puree - 300 gr
- Eggs - 3 pcs
- Sugar - 120 gr
- Salt - a pinch
- Cornstarch - 15 gr
- Cream 33% - 60 ml
- Orange juice and zest - 1 pc.
- Cinnamon - 1 tsp.
- Nutmeg - ¼ tsp.
- Ginger
- Cardomon
- Other spices to taste
Ingredients for cream (optional)
- Cream cheese - 100 gr
- Powdered sugar - 15 g
- Cream 33% - 50 ml
Method of preparation of the base
1.Grind in a blender until crumbly.
2. Add melted butter and mix.
3. Put into a mold and tamp well.
4. Put in the refrigerator while you prepare the filling. ⠀
How to prepare the stuffing
1.Peel the pumpkin, cut into cubes and bake in the oven, or cook in the microwave until tender. If liquid is released - drain. Let cool down and beat into a state of puree.
2. To the cream cheese add pumpkin puree, eggs, sugar, salt, cream, starch and spices.
3. Mix on the lowest speed of the mixer until smooth.
4. Place on top of the base and tap the mold on the table to spread the mixture evenly.
5. Put a container with hot water on the bottom of the oven, and put the mold with cheesecake on the middle level and bake in the preheated oven to 175 g for 50 minutes.
6. Cool directly in the oven with the door open and put away in the refrigerator for a few hours or overnight.
How to prepare the cream
1.Beat cream cheese, powdered sugar and cream until thickened.
2. Place in pastry bag with nozzle and pipe onto cooled cheesecake.
3. Decorate with cinnamon and, if desired, caramel sauce.
