According to experts, pumpkin is the healthiest vegetable. It contains all the vitamins and minerals that the body needs, and I especially recommend eating it in the autumn when you are suffering from vitamin deficiency. You can cook everything from pumpkin - from mashed potatoes, soups, pies, cheesecakes, dumplings to drinks. But children often don't like pumpkin, but it can always be prepared in such a way that they will be happy to eat pumpkin dishes.
Cook Tetiana (tanyushina) shared a recipe for a delicious pumpkin and potato casserole on Instagram, which children and everyone who doesn't like pumpkin will definitely eat.
Ingredients:
- potatoes - 300-400 g
- pumpkin - 400 g
- sweet pepper - 1 pc.
- chili pepper - 1/2 pc.
- green onions
Filling:
- eggs - 2 pcs.
- milk - 150 g
- hard cheese - 50 g
Method of preparation:
1. Dice the potatoes and boil until tender in salted water.
2. Cut the pumpkin into cubes, pepper into strips, onion into small cubes, fry everything until soft, season with salt and pepper.
3. Filling: beat eggs with salt, add milk, spices and grated cheese, mix well.
4. Put the cooked potatoes in the baking dish, top with the pumpkin and pour the filling over. Sprinkle cheese on top.
5. Bake for 20-30 minutes at 180-200°C.
