Puffy zucchini pancakes: be sure to add one ingredient to the batter
In summer, zucchini pancakes are a great option for a simple snack. The vegetable cooks very quickly, so it won't take much time. To make the texture tender and fluffy, add sour cream to the batter.
The idea of making zucchini pancakes with sour cream was published on the Instagram page of the famous Ukrainian chef Andrii Kilisnyk.
Ingredients:
- zucchini - 400 g
- eggs - 2 pcs.
- flour - 100 g
- salt
- sour cream
Method of preparation:
1. Grate the zucchini on a coarse grater, add salt and leave for 5 minutes to release excess moisture.
2. Squeeze and drain the excess juice.
3. Add 2 eggs and mix.
4. Then gradually add flour and mix until smooth.
5. Fry the pancakes in a pan until golden brown and then put them in the oven preheated to 180 °C for 5 minutes.
6. Serve with sour cream.
