Puffy spinach and potato varenyky in 15 minutes: recipe for the perfect dough

Varenyky are a dish that every Ukrainian knows how to cook. They can be made from different doughs and with different fillings. The most important thing is to make a good, elastic dough that will make the varenyky fluffy and soft.

Cook Victoria shared a recipe for delicious varenyky based on spinach dough and filled with mashed potatoes on Instagram.

Ingredients:

Dough:

  • spinach - 50 g
  • water - 150 g
  • egg - 1 pc.
  • flour - 450 g
  • salt - 3 g
  • olive oil - 20 g

Filling:

  • potatoes - 5-6 pcs.
  • suluguni - 200 g
  • butter
  • salt and pepper

Method of preparation:

1. Blend the spinach with water until smooth.

2. Mix flour with salt, add the egg, then pour in the spinach mixture and knead the dough. Add olive oil, cover the bowl with a towel and leave for 15 minutes.

3. Boil the potatoes in salted water and mash them. Add salt, pepper, butter, let them cool slightly and add the grated sulguni. Mix well.

4. Make varenyky and boil them for 4-5 minutes until tender.
