Provencal tomato pie in a hurry for a hearty lunch: the recipe was shared by YevhenKlopotenko
If you want to cook a very tasty and satisfying dish for lunch, but quickly, a pie is the perfect option. You can make them on any dough, add any toppings and serve them for lunch, as well as for a festive lunch or dinner.
Culinary expert Yevhen Klopotenko shared a recipe for a delicious Provencal pie on his website, based on tomatoes and cognac.
Ingredients:
- tomatoes – 600 g
- onions – 250 g
- puff pastry – 500 g
- cognac – 2 tbsp
- dry herbs – 2 tbsp
- olive oil – 2 tbsp
- salt – to taste
Method of preparation:
1. Wash the tomatoes and cut them into two parts.
2. Place on a baking sheet, sprinkle with dried herbs and salt and drizzle with olive oil.
3. Put in the oven for 15-20 minutes at 180°C.
4. Peel and cut the onion into rings, fry in olive oil until golden brown, and cover with a lid.
5. Pour the cognac into the onions a few minutes before they are ready and make sure to let it evaporate.
6. Put the cooked tomatoes in a baking dish, top with the onion, and cover with the dough. Make punctures in the dough with a fork.
7. Put the mold in the oven for 20 minutes at 180°C.
Before serving, invert the mold onto a plate and take out the cake, sprinkle with Parmesan cheese.
