Darren McGrady, the Queen's former cook who became Princess Diana's personal chef, said that the children and the Princess always ate this pie when they returned from school.

Ingredients for the base:

  • Water - 480 ml
  • Ground beef - 700 g
  • Flour - 80 g
  • Onion - 2 pcs.
  • Vegetable oil - 2-3 tbsp.
  • Worcestershire sauce - 1 tbsp.
  • Dried thyme - 1-2 tbsp.
  • Beef broth - 2 cubes

For the filling:

  • Potatoes - 900 g
  • Grated cheddar cheese - 100 g
  • Heavy cream - 4 tbsp.
  • Butter - 55 g
  • Grated nutmeg - a pinch
  • Egg yolk - 1
  • Ground white pepper - a pinch
  • Salt - 2 tbsp.

Cooking method:

  1. Heat oil in a large skillet over high heat, add onion to it and fry well until soft and transparent.
  2. To the onions add beef and fry well.
  3. Then gradually add the flour, thyme, water, stock and Worcestershire sauce to the meat, turn down the heat and simmer for about 30-45 minutes, the sauce should thicken.
  4. The meat should become soft, then transfer it to a baking dish, but do not put it in the oven immediately, let it cool down.
  5. <b>Prepare the stuffing:</b> peel the potatoes and pour water over them, bring to a boil, then turn down the heat and cook<b>for</b> about 20 minutes.
  6. After that, drain the water, and put the pan on low heat to dry the potatoes a little.
  7. Mashed potato the potatoes, add the cream, nutmeg, salt, pepper, egg yolk, stir well and spread this mixture on top of the meat.
  8. Sprinkle the pie with grated cheddar on top and bake for about 20-30 minutes, until the mashed potatoes are golden brown and the pie is fully heated through.
