Potatoes stewed with carp: an authentic Ukrainian dish
Do you have a minute to talk about our culinary god, carp? Or rather, about an authentic Ukrainian dish, potatoes stewed with carp.
Just imagine a tender and flavorful fish soaked in the flavors of spices and onions combined with potatoes. It sounds divine. The recipe for this dish was shared with me by readers from the Vinnytsia region, and now I'm sharing it with you, cats.
Take 1 kg of carp (preferably cleaned immediately, but if you need to, klopotenko.com has tips on how to clean it). Divide the fish into equal portions, salt on both sides and roll in flour (you will need about 50 g). Heat a frying pan, add oil and fry the carp on both sides until golden brown.
Peel 6 potatoes, cut into slices of about 3-4 mm. Cut the onion into half rings. In a thick-bottomed pot or saucepan, layer some potatoes and a few pieces of carp, then another layer of potatoes, onions, salt and pepper to taste.
Pour water to cover the potatoes, add 3 allspice peas and a bay leaf. Simmer until the potatoes are tender, about 40 minutes.
