Potato pancakes with liver: how to combine two popular ingredients in one dish
Potato pancakes are a very nutritious and easy-to-prepare dish the flavor of which directly depends on the filling. They are usually made with fresh potatoes, but sometimes you can also use yesterday's mashed potatoes.
A food blogger with the nickname goptarenkonatali showed how she cooks potato pancakes and what filling she uses on Instagram. As it turned out, this dish tastes great with liver.
Ingredients for the dough
- peeled potatoes - 600 g
- sulguni cheese - 90 g
- flour - 4 tbsp + 2 tbsp for sprinkling
- eggs - 2 pcs
- salt - to taste
- dried garlic - 1 tsp
- oil - for frying
Ingredients for the filling
- chicken liver - 400-450 g
- onion - 1 pc
- carrot - 1 piece
Method of preparation
1. Wash the liver and remove all the excess films.
2. Add salt, pepper, and your favorite seasonings and fry in a pan with vegetable oil until tender.
3. Chop the onion, grate the carrots and fry them as well.
4. Grind the liver in a blender or with a meat grinder. Season to taste with salt and pepper.
5. Boil the potatoes until tender, mash them and let them cool.
6. Add the egg, flour, salt and dried garlic and finely grated cheese. Mix everything well.
7. With slightly damp hands, form the potato pancake in the palm of your hand and put the filling in the middle.
8. Roll in flour and fry in a preheated pan on both sides until golden brown.
9. Put them on a paper towel to get rid of excess oil.
