Potato gnocchi is a great option for a hearty meal. Seasonal vegetables, mushrooms, and meat will make it more delicious. Moreover, the dish is very simple and quick to prepare - just 30 minutes.

Ingredients:

  • potatoes - 4-5 pcs
  • spinach - 100 g
  • mozzarella - 150 g
  • hard Parmesan cheese - 100 g
  • egg yolk - 1 pc
  • flour - 1 cup

Cream sauce:

  • cream - 100 ml
  • greens - 100 g
  • salt, pepper - to taste

Mushroom sauce:

  • chanterelles - 100 g
  • onion - 1 pc
  • garlic - 1 clove
  • vegetable oil - 2-3 tbsp
  • salt, pepper - to taste

Method of preparation:

  1. Boil the potatoes and mash them in a convenient way.
  2. In a separate bowl, mix the potatoes, egg yolk, flour, salt, and pepper thoroughly.
  3. Form potato balls with your hands, put them in a ceramic mold, and sprinkle with chopped herbs on top.
  4. Bake at 180 C for 20 minutes.
  5. Sprinkle the dish with grated cheeses 5 minutes before the end.
  6. For the cream sauce, throw the spinach into a hot frying pan and fry for about 1 minute. Then pour in the cream, season with salt and pepper, stir and cover for 2-3 minutes.
  7. For the mushroom sauce, wash chanterelles, fry in vegetable oil until golden brown, add chopped onions, season with salt and pepper, and add chopped garlic. Close the lid and simmer for about 5-7 minutes.
Gnocchi can be made with a variety of vegetables.
