Potato "boats" with a delicious filling of cheese and corn: an original recipe from Yevhen Klopotenko
Potatoes are not only tasty, but also very healthy and satisfying, and they are the basis for many dishes, from the most basic ones: soups, zrazy, and pancakes, to casseroles and gratins.
On Instagram, chef Yevhen Klopotenko shared a recipe for delicious potato "boats" with a delicious corn filling.
Ingredients:
- potatoes – 5 pcs
- canned corn – 150 g
- hard cheese – 180 g
- butter – 50 g
- parsley – 5 sprigs
- salt, pepper – to taste
Method of preparation:
1. Wash the potatoes, pat dry with paper towels, and wrap each potato in foil, place on a baking sheet or in a baking dish, and bake for about 1 hour.
2. Remove the cooked potatoes from the foil and let them cool, then make a hole with a spoon and pick out the middle.
3. Put the potatoes in a bowl, mash them, and add the softened butter.
4. Grate the cheese, add corn, chopped herbs, and mix thoroughly.
5. Spoon the filling into the potatoes, sprinkle with cheese on top, transfer the "boats" to the baking dish, and bake the potatoes for about 20-25 minutes at 180°C.
