Popular brioche bread: what is the secret to successful dough
Brioche is a famous French pastry that dates back to the sixteenth century. This product does not lose its relevance even today, and this is not surprising. The brioche successfully combines ingredients that make the dough extremely easy to prepare, kneads quickly, and does not stick to your hands. And the brioche itself remains airy, flavorful, and doesn't get stale for several days.

Ingredients:
- fresh yeast - 8 g
- warm milk - 100 ml
- flour - 250 g
- sugar - 40 g
- salt - 1 tsp
- eggs - 3 pcs
- butter - 175 g
Additionally:
- yolk - 1 pc.
- milk - 1 tbsp.
Important: all the ingredients must be cold!
Method of preparation:
1. Pour warm milk over the yeast. Add 1 tsp of sugar and 2 tbsp of flour. Stir and leave for 10 minutes.
2. Mix the rest of the flour with sugar and salt. Add the yeast to the mixture. Mix well.
3. Gradually add the eggs. Knead the dough on low speed for 4 minutes, then for 6 minutes.
4. Gradually add the butter, continuing to knead the dough until smooth.
5. Grease a deep bowl with oil, put the dough in and cover with cling film. Leave in the refrigerator overnight.
6. Divide the dough into 2 parts, put into molds and bake at 37 degrees for 1 hour.
7. Preheat the oven to 180 degrees. Brush the top of the brioche with beaten egg yolk and milk. Bake for 18-20 minutes.
8. Cool the brioche for about 10 minutes. Then put it on a wire rack.
