Polish pork chops in marinade and breading: how to diversify a familiar dish
In Polish cuisine, one of the most famous dishes is chops, which differ significantly from ours in terms of cooking technology. The fact is that before frying, the meat undergoes a whole preparation: first, it is marinated in a milk marinade, and then thoroughly breaded in flour, eggs, and breadcrumbs. These chops are extremely tender, soaked, and with a very crispy crust.

Ingredients:
- Pork – 700 g
Marinade:
- milk – 300 ml
- onion – 150 g
- garlic – 1-2 cloves
- salt, pepper
Breading:
- eggs – 2 pcs
- milk from the marinade – 50 ml
- breadcrumbs
- wheat flour
Method of preparation:
1. Marinade. Pour the milk into a deep container.
2. Chop the onion and add to the milk.
3. Pass the garlic through a press. Add salt and pepper. Stir to combine.
4. Cut the meat and beat off the smooth part of the hammer.
5. Put the meat in the marinade and leave for 1 hour.
6. Beat the eggs until smooth. Season with salt and pepper.
7. Pour into the eggs the milk in which the meat was marinated.
8. Place the breadcrumbs and flour on separate plates.
9. Roll the meat in the flour, then in the egg and breadcrumbs. Fry the chops.
