Pistachio Easter cake with burning icing: we share an original recipe for festive pastries
If you want to make a delicious, successful, and at the same time original Easter cake, pistachio cake is the perfect option. It is not only delicious but also very impressive.
The cook shared a recipe for a very lush, delicious Easter cake with pistachio cream and meringue on Instagram.
Ingredients:
- 360 g of cottage cheese
- 200 g of sugar
- 200 g of butter
- 400 g of flour
- 2 tsp of baking powder
- vanilla extract
Pistachio cream:
- 350 g milk (3.2 fat)
- 100 g of egg yolks
- 180 g of sugar
- 40 g of corn starch
- 3-4 tbsp of pistachio paste
For the meringue:
- 1 egg white
- 60 g of icing sugar
Method of preparation:
1. Beat the cottage cheese, eggs, sugar, and vanilla in a blender. Add the melted butter and baking powder and mix well. Add the flour and knead the dough. Fill the molds 2/3 full and put them in the oven for +-1 hour at 180°C.
2. Pistachio custard: mix the yolks with sugar, pour in the milk, and bring to a thick state in a water bath. Then add the starch and paste and mix.
3. Merengue: beat the egg whites with powdered sugar.
4. Cool the finished Easter cake, cut off the top, pick out the middle with a spoon, pour the cream in, cover and decorate with meringue and, if possible, brown it.
