Homemade pies are undoubtedly the most delicious pastries. The dish is very fluffy, fragrant, and satisfying. Therefore, you really want the products to stay fresh and not get stale for as long as possible. To do this, you need to know the detailed technology for making soft and elastic dough.

Ingredients for the dough:
- warm milk - 160 ml
- fresh yeast - 20 g
- eggs - 2 pcs
- vanilla sugar - 1 sachet
- sugar - 90 g
- butter - 70 g
- flour - 400-500 g + turmeric for color + salt - 0.5 tsp
Ingredients for the filling:
- peeled apples - 800 g
- sugar - 2 tbsp
- butter - 25 g
- cinnamon - to taste
Method of preparation:
1. Prepare the filling: peel the apples, and cut them into small cubes.
2. In a saucepan with a thick bottom, pour the sugar and add a piece of butter. Then add the apples. Add cinnamon if desired.
3. Cook until the moisture evaporates.
4. Remove from heat and leave to cool.
5. Prepare the dough: grind the yeast into a bowl.
6. Add 1 tsp of sugar from the total amount.
7. Pour in milk, and add 4.5 tablespoons of flour from the total amount.
8. Mix well with a whisk, and cover with cling film or a towel.
9. Leave in a warm place for about 20 minutes – a foamy cap should form.
10. Prepare the muffin: add the rest of the regular sugar, vanilla sugar, and softened butter to two egg whites and one egg yolk.
11. Mix well with a whisk.
12. Add the muffins to the dough and mix with a whisk.
13. Add the sifted flour with a pinch of turmeric in several stages.
14. Knead the dough.
15. Put a lump of dough on a greased surface.
16. Knead the dough for about 10 minutes.
17. You should get a soft elastic dough.
18. Put back into the bowl, cover with a towel, and leave for about 40 minutes.
19. The dough should increase in size by 2-2.5 times.
20. Then knead the dough with your hands and leave it again to rise.
21. Put the dough on a work surface.
22. Grease your hands with oil.
23. Divide the mass into 12 equal parts.
24. Round each piece of dough, cover, and leave for 10 minutes.
25. Form the pies conveniently. The main thing is to pinch the edges well.
26. Put in a baking dish covered with parchment with the seam to the bottom. Leave to rise for 20-25 minutes.
27. Brush with egg yolk and water. Leave for 5 minutes.
28. Bake at 180 degrees for 25-30 minutes.
