Zucchini rolls are usually made from fried vegetables. For the filling, choose mayonnaise with garlic. But if you want to prepare the product for the winter, you can also make rolls, but pickled. Put other seasonal vegetables inside.

Ingredients:

  • young zucchini - nearly 2 kg
  • cucumbers - 850 g
  • carrots - 300 g
  • garlic - 1 head
  • parsley - a few sprigs
  • allspice, bitter peas
  • oil - 6 tsp

Ingredients for the marinade:

  • water - 2 liters 400 ml
  • salt - 2.5 tbsp
  • sugar - 7.5 tbsp
  • vinegar - 100 ml.

Method of preparation:

1. Cut zucchini and cucumbers into thin slices with a slicer or a special grater.

2. Put a cucumber slice on a zucchini slice and roll them up. Do the same with all the other vegetables.

3. Grate the carrots on a grater for Korean-style carrots.

4. Put two cloves of garlic and grated carrots on the bottom of clean jars and carefully place the rolls. Add parsley sprigs and peppercorns.

5. Add a teaspoon of oil to each jar.

Method of preparation of the marinade:

1. Put water on the fire and bring to a boil. Add sugar, salt, and vinegar, mix everything thoroughly.

2. Pour the marinade over the zucchini. Then transfer the jars to a saucepan, cover the bottom with a towel, pour water to the top, cover with lids and put on fire.

3. After boiling, sterilize for 10 minutes.

4. Then close the jars tightly with lids, turn them over and cover with a warm towel.

5. Leave to cool completely.
