Pickled zucchini in Bulgarian style: how to make a delicious snack for the winter in an original way
Zucchini is a versatile vegetable that can be the basis for making pancakes, fritters, pies, and casseroles. Zucchini can also be canned and grilled.
Cook Tetiana shared a recipe for canned zucchini on Instagram, which would be a great snack for the winter.
Ingredients:
- Young zucchini - 2 kg
- Garlic
- Horseradish leaves and dill umbels
- Bay leaves
- Mustard seeds
- Black pepper
For the marinade:
- Water - 2 liters
- Salt - 3 tbsp. l
- Sugar - 200 g
- Vinegar 9% - 250 ml
Method of preparation:
1. Cut the zucchini into 1 cm thick slices. Put herbs, garlic, bay leaves, black pepper and mustard seeds in clean jars.
2. Marinade: in a large saucepan, combine water, salt, sugar, vinegar, bring to a boil. Pour the zucchini into the marinade and cook for 5-7 minutes, stirring all the time. The zucchini should change color. After 5-7 minutes, remove the pan from the heat and put the zucchini in jars.
3. Bring the marinade back to a boil and pour over the zucchini, then seal the lids.
