Pickled salted cherries with spices: a simple recipe for a savory dish

Ingredients:
- cherries with pits - 500 g
Marinade:
- sugar - 350 g
- apple cider vinegar - 350 g
- bay leaf
- clove
- anise star
- cardamom
- a piece of cinnamon stick
- black peppercorns
- allspice
- salt - to taste
Method of preparation:
1. Wash the ripe cherries and remove the stems.
2. Rinse the berries again with running water.
3. For the marinade: combine the vinegar, sugar, bay leaf, spices, and salt. Bring to a boil, stirring constantly to dissolve the sugar.
4. Put the cherries in jars, pour the prepared cherries with the hot marinade, close the lid, and leave to cool.
5. Pour off the mature marinade, boil it again, and pour it over the cherries again.
Tip: On the first day, this procedure should be performed 4 times. For the next two days, drain and boil the marinade 2 times. On the fourth day, put the cherries on the stove with the marinade and bring to a boil.
6. Pour everything into a sterilized jar and close with a sterile lid.
7. Turn upside down and wrap until cool.
