Pickled eggplants like mushrooms: easy to prepare

Seasonal eggplants can be used to prepare a variety of appetizers. For example, such vegetables can be marinated. In flavor, the vegetables will resemble mushrooms.

The idea of preparing quick pickled eggplants is published on the Instagram page of food blogger Yulia Senych (yuliia.senych). Vegetables for such an appetizer need to be fried.

Ingredients:

  • eggplants - 2 pcs.
  • garlic - 3-4 cloves
  • onion - 1 pc.
  • sugar - 1 tbsp.
  • oil - 3 tbsp.
  • vinegar - 3 tbsp. (if guilty, if ordinary 9% - 2 tbsp.)
  • salt - 1 tsp.
  • bunch of dill
  • coriander - as desired

Method of preparation:

1. Cut the eggplants into large cubes.

2. Fry in a well-heated frying pan with vegetable oil until golden.

3. For the marinade, mix the chopped onion and grate the garlic into it.

4. Pour in the oil and vinegar.

5. Pour in the sugar and salt, stir.

6. Mix the marinade with the roasted eggplants and, if desired, add nutmeg.

7. At the end add chopped dill and leave in the refrigerator for at least an hour, better overnight.
