Ingredients:

  • 180 ml of water
  • 20 g of pressed yeast or (7 g of dry)
  • 0.5 tsp of sugar
  • 2 tbsp of olive oil
  • 300 g of flour
  • 1 tsp of salt

For the filling:

  • 200 g lightly salted salmon
  • 100 g of cream cheese (I have Philadelphia)
  • 20 g of arugula
  • 100 g of mozzarella

Method of preparation:

1. Add yeast, sugar, and 2 tbsp of flour to warm water. Stir, cover, and leave in a warm place for 10 minutes.

2. Then add oil and salt to the dough and mix.

3. Sift the flour and knead a soft dough that will not stick to your hands.

4. Cover and put back in a warm place for 10 minutes.

5. Then divide the dough into two parts and roll out one part immediately on parchment.

6. Bake in a preheated 180-degree oven for 15 minutes, until golden brown.

7. Remove, and cool for 3-4 minutes.

8. Spread well with cream cheese, then put mozzarella, fish and arugula. Sprinkle with Provencal herbs if desired.
