- Use only fresh yeast, as it completely determines what the dough will be like and how it will "rise".
- Be sure to add warm, fresh milk to the dough. It will add extraordinary lightness to the pies, and they will also have a pleasant flavor.
- Use 2 types of oil - vegetable oil -1-2 tbsp and, of course, butter. Thanks to them, the dough will be moderately moist, heavy, and buttery, with a uniform structure.
- Do not spare eggs, especially the yolks, they will give a very pleasant golden color, delicious aroma, and excellent taste. Their main purpose is to bind all the ingredients together so that the dough does not crumble during heat treatment.
- When choosing flour, be extremely careful, only the highest quality flour is suitable for pies, be sure to sift it 2-3 times before using it so that it is enriched with oxygen, and the pastries will be very airy and light.
1. Dough with dry yeast and milk
Ingredients:
- Milk - 200 g
- Dry yeast - 10 g
- Flour - 500 g
- Oil - 100 ml
- Chicken eggs - 1-2 pcs.
- Sugar - 3 tbsp.
- Salt - 0, 5 tsp.
Method of preparation:
- First of all, warm the milk well, add dry yeast, mix thoroughly, add sugar, and only 5 tbsp. l sifted flour, mix everything with a spoon, and leave the dough for 25 minutes, cover with cling film or a towel.
- After the time has elapsed, add the eggs, oil, salt, and the remaining flour, but be sure to sift.
- Knead the dough well with your hands and put it in a warm place for 1 hour so that it "comes up" and doubles in size.
- Then knead it again and you can start making pies.
2. Kefir dough without yeast and eggs
Ingredients:
- Flour - 500 g
- Kefir - 1 glass
- Oil - 100 ml
- Salt - 1/4 tsp
- Soda - 1/3 tsp.
Method of preparation:
- Sift the flour 2 times.
- In a separate bowl, combine kefir, salt, sugar, and vegetable oil, and mix.
- Gradually add the sifted flour, mix, cover with a towel, and let it "come up" for about 1 hour.
- After that, knead it again with your hands and you can make pies.
