Perfect homemade Napoleon cake with custard: how to make a popular dessert
It is very easy to make homemade Napoleon cake at home. It will be much better than buying a dessert in a store. You need to make a very simple dough based on sour cream and butter, as well as regular custard for soaking.
The idea of making a delicious homemade Napoleon was published on the Instagram page of food blogger Tatiana Panova (tanyasenkova). The main thing is to observe the proportions.
Ingredients for the dough:
- flour - 360 g (+for dusting when rolling out the cakes)
- sour cream - 140 g
- egg - 1 pc.
- butter (or margarine) - 250 g
- salt - 3 g
- cognac - 10 g
Ingredients for the cream:
- milk 3.2% - 900 g
- sugar - 230 g
- salt - 5 g
- corn starch - 45 g
- chicken egg - 3 pcs.
- butter 82.5% - 200 g
- vanilla to taste
Method of making the dough:
1. Beat soft butter or margarine with sour cream and eggs.
2. Add salt, cognac (or baking powder), flour, and knead the soft dough.
3. Wrap in plastic wrap and refrigerate for 30-60 minutes.
4. Divide the dough into 8-10 pieces, roll out on a floured table and bake on parchment at 180-200 degrees until golden brown. Let it cool down.
Method of preparation of the cream:
1. Mix eggs, sugar, salt and starch with a whisk.
2. Add milk and vanilla.
3. Stir and put on low heat.
4. Cook over low heat, stirring constantly, until the mass thickens and large bubbles form.
5. Remove from heat, let cool to room temperature.
6. Add the soft butter, beat with a mixer, cover with cling film, and refrigerate until completely cooled and stabilized.
7. Let it stand at room temperature for 1-1.5 hours, and then put it in the cold.
