Perfect breakfast cheesecakes that always work: secrets and recipe from Yevhen Klopotenko
The best breakfast dish is cheesecakes. They are very tasty, hearty, and healthy. You can even make them without flour, sugar, or eggs. But it is worth remembering that very often they do not turn out well because of flour, liquid dough, and also because they are not fried properly.
Chef Yevhen Klopotenko shared a recipe for successful and delicious cheesecakes on his YouTube channel, which are very quick and easy to prepare (to watch the video, scroll to the end).
Secrets from the chef:
1. Cottage cheese should not be moist and grainy, it is difficult to work with such a product and the cheesecakes do not turn out tasty and successful.
2. Mash the cottage cheese with a fork and add a little sugar; it can make the dough runny.
3. Before frying, heat a frying pan very hot and fry the cheesecakes for about 1 minute on each side.
Ingredients:
- Cottage cheese (9% fat) – 400 g
- Eggs – 1 pc
- Flour (and extra for the dominance) – 3 tbsp
- Sugar – 3-4 tbsp
- Salt – a pinch
- Vanilla sugar – 10 g
- Sunflower oil for frying – 1-3 tbsp
Method of preparation
1. Mash the cottage cheese with a fork, then add eggs, sugar, vanilla sugar and mix well.
2. Add the flour to the ready-made cottage cheese mixture and mix well again.
3. Shape the cheesecakes with your hands and sprinkle with flour.
4. Heat a frying pan well, and pour in vegetable oil.
5. Place the cheesecakes and fry them on each side.
The dish can be served with jam, condensed milk, and sour cream.
