Kefir pancakes are considered one of the best because the texture of the dough is very fluffy and tender. But before adding the fermented milk product, you need to heat it well – that's when the effect will be perfect. In addition, the stage at which you add the baking soda is very important.

The idea of making pancakes with hot kefir was published on the Instagram page of food blogger Anastasia Maltseva (malltssevva). According to this technology, soda is added at the very end.

  • chicken eggs - 2 pcs.
  • salt - half a teaspoon
  • sugar - 3 tablespoons
  • kefir - 400 ml
  • flour - 400 g (you need to look at the consistency)
  • baking soda - half a teaspoon

Method of preparation:

1. Beat the eggs, add a pinch of salt and 3 tablespoons of sugar. Stir until the sugar melts.

2. Turn on the gas stove to low heat and hold the bowl over the gas, while stirring the egg mixture with salt and sugar. This way, the salt and sugar melt faster and you don't have to wait long.

3. Pour kefir of any fat content into a saucepan and put it on low heat to heat it up. Turn off when the first bubbles appear.

4. Pour the kefir into the egg mixture in a thin stream, stirring constantly.

5. Add flour – adjust the amount according to the consistency of the dough. Mix thoroughly with a whisk and make sure that it should not be liquid (otherwise the pancakes will not rise) and should not be too thick.

6. Add half a teaspoon of baking soda, gently stir it into the dough, and leave for 5-10 minutes until bubbles appear.

7. Add the baking soda at the very end.

8. To make the pancakes not greasy, fry them in olive oil.
