Orange muffins that always work: Yevhen Klopotenko shares his recipe
Cupcakes are a delicious, buttery confection based on butter sponge or yeast dough. You can add various berries, dried fruits, nuts, raisins, zest, and chocolate to it.
Chef Yevhen Klopotenko shared a recipe for delicious, airy orange cupcakesthat take 45 minutes to prepare on his website.
Tips from the cook:
- make the dough on kefir, the cupcakes will be very soft and airy
- for flavor and delicate structure, add orange zest and juice to the dough
Ingredients:
- flour – 360 g
- kefir – 250 ml
- baking powder – 10 g
- sugar – 200 g
- eggs – 3 pcs
- vanilla sugar – 10 g
- orange – 1 pc
- salt – a pinch
Method of preparation:
1. Beat the eggs well with the sugar, salt, and vanilla sugar so that all the ingredients are evenly dissolved.
2. Add kefir to the egg mixture and mix well.
3. Grate the zest, squeeze the juice from the orange, and add to the dough.
4. Sift the flour, add the baking powder, pour it into the egg mixture, and mix thoroughly.
5. Grease the muffin tins with oil or simply put paper liners.
6. Pour out the batter, no more than 2/3 of the volume, the muffins rise well.
7. Put the muffins in the oven for 25 minutes at 180 C.
