Olivier salad is one of the most delicious and simple homemade salads that can be prepared both for a festive and everyday table. To make the salad healthy, you can replace sausage with meat, and store-bought mayonnaise with homemade sour cream or yogurt.

Cook Valentyna Sayenko shared her recipe for Olivier with chicken, fresh and pickled cucumber, potatoes, and carrots on Instagram.

Ingredients:

  • meat (chicken) - 600 g
  • potatoes - 500 g
  • carrots - 200 g
  • eggs - 5 pcs.
  • peas - 250 g
  • salted cucumbers - 200 g
  • fresh cucumber - 1 pc.
  • green onions - to taste
  • onion - 1 pc.
  • mayonnaise - 5 tbsp
  • grain mustard - 2 tbsp.
  • olive oil - 1 tbsp.

Method of preparation:⠀

1. Boil the vegetables and cut them into cubes. Chop the cucumbers in the same way.

2. Boil or bake the meat and cut into cubes. Add to the bowl.

3. Add the peas. Finely chop the onion.

4. Add mustard and olive oil to the mayonnaise, mix and season the salad.
