According to experts, pumpkin is the healthiest autumn vegetable. It contains a lot of vitamins and minerals that are so necessary, especially in the fall and winter.
People's Artist of Ukraine Olha Sumska shared a recipe for a delicious pumpkin soup with feta cheese on her Instagram stories, which is, firstly, quick to prepare, and secondly, hearty and very light at the same time.
Ingredients:
- pumpkin - 200 g
- garlic - 2 cloves
- onion - 1 pc.
- milk - 100-150 ml
- butter - 30-40 g
- water - 100 ml
- cheese - 100 g
- ginger - 1 tbsp
- pumpkin seeds - a handful
Method of preparation:
- Wash the pumpkin, be sure to peel it, and cut it into cubes.
- Peel and dice the onion, chop the garlic, and fry in a saucepan with butter.
- Add the pumpkin and stew well for 5 minutes under a closed lid.
- Then add milk and water, stir, and simmer for another 10-15 minutes.
- At the very end, add the cheese, and grated ginger, transfer everything to a blender, and whisk until smooth to make a liquid puree soup.
Serve the dish hot, and sprinkle with pumpkin seeds.
