What Ukrainian doesn't love borsch, especially when it's cooked well – with meat, healthy vegetables, beans, sour cream, and spices. There are many recipes for this traditional dish, but each region of Ukraine has its own way of cooking borsch.

People's Artist of Ukraine Olha Sumska shared a recipe for a delicious, lean borsch on Insta-Stories that you can easily prepare at home, and it will be absolutely low in calories.

How to cook lean borscht

Ingredients:

  • potatoes - 1 pc.
  • beets - 2 pcs.
  • carrots - 1 pc.
  • cabbage - 1/2 pc.
  • tomatoes in their own juice - 350 g
  • onion - 1 pc.
  • leek - 1 pc.
  • olive oil - 2-3 tbsp
  • salt - to taste
  • coconut sugar - to taste

Method of preparation:

Homemade borscht
  1. Wash the potatoes and cut them into cubes.
  2. Grate beets, carrots, dice onions, and fry everything in olive oil.
  3. Put it all in a saucepan and pour boiling water over it, add chopped leeks, and cook for about 10 minutes.
  4. Chop the cabbage and add it to the pot, stir.
  5. Then add the tomatoes in their own juice, stir, add salt, add a little coconut or regular sugar, stir, and cook for another 10-15 minutes.

Ready borscht can be served with greens, it will be very tasty and flavorful.
