Odesa-style eggplant caviar: how to prepare at home
Everyone associates eggplant caviar with Odesa because that's where every housewife prepares this dish. In this city, this appetizer is made using a special technology, namely, a green apple is added. This creates a pleasant sourness and sweetish flavor.
The idea of cooking Odesa eggplant caviar was published on the Instagram page of food blogger Eduard Nasirov (my_happyfood).
Ingredients:
- eggplants - 2 pcs.
- peppers - 2 pcs
- tomatoes - 3-4 pcs
- garlic - 1-2 cloves
- green apple - 1 pc
- red onion - 1 pc
- lemon - 1/2 (juice)
- olive or vegetable oil - 40 ml
- salt and pepper - to taste
- herbs - a bunch (parsley, cilantro)
Method of preparation:
1. Make a few punctures in the eggplant with a knife and put it in the oven preheated to 220 degrees for 30 minutes.
2. Cover with a bowl or put in a bag and let it steam. Peel and finely chop with a knife.
3. Mix all the ingredients in a bowl.
4. Put the caviar in the refrigerator for several hours.
5. Serve with bread.
