One of them is the oatmeal pancake, which can be combined with both sweet and savory foods.

1. Oatmeal pancake with mozzarella

Pancake with cheese and vegetables

Ingredients:

  • Oatmeal – 50-80 g
  • Milk – 30 ml
  • Eggs – 2 pcs
  • Salt – to taste

Filling:

  • Mozzarella – 30 g
  • Cucumbers – 1 pc
  • Watercress – 50 g
  • Oil – 2 tbsp

Method of preparation:

  1. Whisk the oatmeal in a blender, add milk to it, and leave it for 20 minutes to swell.
  2. After that, add the eggs, and salt well and mix everything until smooth.
  3. Prepare the filling: chop the mozzarella, slice the cucumbers, and chop the watercress into large pieces.
  4. Pour the oil and dough into a hot frying pan, when the pancake is set, turn it over to the other side and add the filling.
  5. Press half the pancake lightly with a spatula to make it look like a roll.

Serve with fresh vegetables.

2. Sweet oatmeal pancake with banana

Ingredients:

  • banana – 1 pc
  • oatmeal – 3 tbsp
  • milk – 50 ml
  • sugar – 1 tbsp
  • eggs – 1 pc
  • salt – to taste
  • oil – 2 tbsp
  • cinnamon – 1/2 tsp

Method of preparation:

  1. Pour the oatmeal with milk and let it stand for 15-20 minutes so that it swells well.
  2. Then add eggs, sugar, salt and whisk well.
  3. Cut the banana into slices and sprinkle generously with cinnamon.
  4. Heat the frying pan well, pour in the oil, and pour the batter.
  5. When the pancake is browned, it's time to turn it over and immediately put the banana and cinnamon on top, turn off the heat after 15 seconds and roll the pancake.

Serve with tea, coffee, chocolate, cream, and fruit.
