Nutritious zucchini cream soup: add one special ingredient
Zucchini is a very nutritious product that can be used to make a variety of pancakes, casseroles, or simply fried in flour and egg. It's also a great idea to make a healthy cream soup. Don't forget to add one simple ingredient that goes well with vegetables and makes the dish complete.
The idea of making a healthy and satisfying creamy zucchini soup was published on the Instagram page of healthy eating expert Daryna Doroshkevych (treskablog). The special ingredient in question is thyme.
Ingredients:
- zucchini - 500 g
- chicken or vegetable broth - 500 ml.
- 20% fat cream - 200 ml.
- potatoes - 3 pieces (cut into cubes)
- onion - 1/2 (chop)
- garlic - 2 cloves (chop
- salt - to taste
- olive oil - 2 tbsp.
- butter - 10 g
- thyme - 3 sprigs of fresh or 1 tsp. dried
Method of preparation:
1. Fry onion and garlic in oil and butter until transparent.
2. Add the potatoes and cover with broth or water.
3. Add salt and cook for 10 minutes.
4. Add diced zucchini and thyme, cook for another 15 minutes.
5. Then blend everything in a blender until a perfect creamy soup, you can leave the pieces.
6. At the end, add cream, bring to a boil and turn off.
