Not only Vinaigrette: how to prepare a healthy salad with baked beets
Beetroot is a simple but quite versatile product that is always available at home. The easiest thing to make with this vegetable is a delicious and healthy salad. It turns out to be a full and satisfying dish that is quite suitable for lunch and dinner even with a minimum of ingredients.
Food blogger Oksana (oxana_bil) shared a recipe for healthy baked beet salad on her Instagram page.
Ingredients:
- beets
- herbs (dill, parsley)
- cheese (feta/mozzarella)
- black pepper, salt
- olive oil
- pumpkin seeds for serving
Method of preparation:
1. Pre-bake the beets.
2. Peel and cut the vegetable into cubes.
3. Chop the greens.
4. Cut the cheese.
5. Mix all the ingredients.
6. Dress with olive oil and add spices.
7. Sprinkle with seeds before serving.
