Not only porridge: pumpkin risotto for a hearty dinner
Risotto is a traditional Italian dish based on rice. It will be delicious if you add butter, wine, and Parmesan cheese to it. It is worth noting that there are so many recipes for this dish that everyone can definitely find one to their liking.
Chef and MasterChef judge Volodymyr Yaroslavskyi shared a recipe for a completely unusual dish - pumpkin risotto - which will be a great option for lunch and dinner on Instagram.
He also told us about the main secrets of cooking the dish:
- Add a little more oil and Parmesan than usual.
- Do not rinse the rice at all as starch is needed for a good sauce.
- Wine is a must-have.
Ingredients:
- Arborio rice - 20 g
- vegetable broth - 600 g
- white onion - 30 g
- white dry wine - 40 g
- pumpkin - 250 g
- olive oil - 15 g
- butter - 35 g
- Parmesan cheese - 80 g
- rosemary - a sprig
- thyme - a sprig
Method of preparation:
1. First, fry the finely chopped onion in vegetable oil until white.
2. Cut the pumpkin and add to the onion. Mix and fry.
3. Do not rinse the rice. Add it immediately and mix again.
4. Then pour in the wine and cook until evaporated.
5. Add the vegetable broth and salt and stir several times.
6. Add the herbs.
7. Then remove them, remove the risotto from the heat, add butter, mix well and add the Parmesan.
"You can add orange zest, cinnamon, or any spices to taste to make the dish play with new flavors every time, and you should eat it right away while it's hot," Yaroslavskyi recommends.
It will also be delicious if you add pumpkin seeds, quality olive oil, and even crispy fried bacon to the dish.
