Gazpacho is a cold tomato soup with bell peppers, red onions, garlic, and other vegetables. You don't have to boil anything. The dish is very light and nutritious.

The idea of making cold gazpacho soup was published on the Instagram page of food blogger Yana (ohmyborsh). It can be served with croutons.

Ingredients:

  • tomatoes - 750 g
  • cucumbers - 150 g
  • bell pepper - 150 g
  • hamburger bun - 1 pc.
  • red onion - 30 g
  • garlic - 1 clove
  • olive oil - 4-5 tbsp
  • balsamic vinegar - 2 tbsp
  • salt to taste (do not regret)
  • milk/cream - 2 tbsp
  • mint, cilantro or parsley - a few sprigs

Method of preparation:

1. Peel the cucumber and chop it finely.

2. Add chopped tomatoes, peppers and onions to the cucumber.

3. Grate the garlic.

4. Add the center of the bun, mint leaves, milk, and oil.

5. Season well with salt and beat with a blender.

6. Rub through a sieve for a more tender texture.

7. Add a little more oil and balsamic vinegar.

8. Check for salt. Add to taste.

9. If the tomatoes are not very sweet, add a little sugar.

10. Mix well.
