Not milk: what to soak liver in so that it is not bitter and does not have an unpleasant odor
Very often, when cooked, the liver turns out to be tough and even raw inside, and an unpleasant odor remains. To avoid this, cooks advise pouring milk over the liver or boiling water before cooking!
A cook shared a recipe for delicious liver, which is not bitter and will be very soft, on Instagram.
Ingredients:
- liver - 500 g
- onion - 4 pcs.
- oil
- garlic - 2 cloves
- sour cream - 6 tbsp
- mustard - 2 tsp.
- sugar, salt, pepper, favorite - to taste
Method of preparation:
1. Wash, chop, and peel the liver. Then immediately pour boiling water over it. Thus, the liver will be softer and without an unpleasant odor than when soaked in milk.
2. Peel and cut the onion into thin half rings, fry in a little oil over medium heat, and add 1/2 tsp of sugar and a pinch of salt. When the onion begins to brown, add the finely chopped garlic and fry, stirring.
3. After 1 minute, add the liver, salt/pepper to taste and reduce the heat. Simmer for 3 minutes, covered with a lid.
4. For the sauce, mix mustard and sour cream. If you have thick homemade sour cream, you can add a little water. Pour the sauce over the liver, stir and simmer under the lid for about 10 minutes, stirring occasionally and adding water to achieve the density you need.
Serve with any side dish!
