Not greasy and transparent: how to cook aspic properly
Not everyone knows how to make aspic, and this is not surprising because in order for this dish to be truly delicious, not greasy and not cloudy, you need to know a few simple but essential culinary secrets. It is worth noting that this dish takes more than one hour to prepare.
Chef Valentyna Sayenko shared a recipe for a delicious, homemade chicken aspic with vegetables on Instagram.
Ingredients:
- homegrown chicken - 1/2 pc.
- carrots - 1 pc.
- onion - 1 pc.
- peppercorns - 5-6 pcs.
- bay leaf - 1-2 pcs.
- garlic - 2 cloves.
- eggs - 1 pc.
- peas - 20-50 g
- olives - to taste
- greens - to taste
- gelatin
- boiled carrots (can be made from broth)
- bell pepper
- corn
- pomegranate seeds ⠀
Method of preparation:
1. First, cook the broth based on vegetables and chicken meat, it should boil well. This will give the dish transparency!
2. Then remove the chicken and vegetables and carefully strain the broth through a sieve. You can use cheesecloth to make it even cleaner.
3. Separate the meat from the skin and bones.
4. Bring the broth to a boil, add salt and pepper. At the very end, add 2 cloves of finely chopped garlic.
5. Soak gelatin in cold water, mix and pour into the broth. Stir.
6. Put the chopped vegetables in the bottom of the baking dish, then the meat and pour the broth and gelatin over. Garnish with boiled eggs, olives, and peas. Leave to freeze for 4 hours, but preferably overnight.
To remove the dish from the mold, put it in boiling water for 10-15 seconds and simply turn it over onto a plate!
