Beetroot is one of the most delicious, healthy and simple vegetables, and it is often the basis for many dishes, from salads to borscht. It can also be used to make pancakes, pie fillings, cold soups, and even vegetable cutlets.

Culinary expert Yevhen Klopotenko has shared on his website recipes for light beetroot dishes that you can easily prepare at home.

1. Beetroot salad with prunes and nuts

Ingredients:

  • beets - 2 pcs.
  • prunes - a handful
  • hazelnuts - 50 g
  • pickled cucumbers
  • sunflower oil - 3 tbsp.
  • salt, pepper - to taste

Method of preparation:

1. Bake the beets in the oven or boil them. Then peel and grate the beets on a coarse grater.

2. Pour boiling water over the prunes, then cut into small slices.

3. Chop the hazelnuts with a knife and cut the pickled cucumber into cubes.

4. Put everything in a bowl, drizzle with oil, salt and pepper and eat!

2. Beetroot salad with feta

Ingredients:

  • beets - 400 g
  • pear - 300 g
  • Feta cheese - 150 g
  • mint - 2 sprigs
  • lemon juice - 1 tsp.
  • Salt, pepper to taste

Method of preparation:

1. Boil the beets, peel and cut into large cubes.

2. Core the pear and cut it into cubes.

3. The cheese can be crumbled.

4. Tear the mint leaves from the stems and tear them with your hands.

5. Assemble the salad: put all the ingredients in a bowl, drizzle with lemon juice and olive oil, pepper, salt, mix and serve.
